Description
Dr. Teresa Gervasi is Associate Professor of Fermentations Chemistry (CHEM07/C ) of the University of Messina. She graduated in Biology at the University of Messina, Faculty of Science MM. FF. NN. cum laude, arguing the experimental thesis "Production of astaxanthin from Phaffia Rhodozyma by a controlled fermentative process". Being a PhD student in “Chemistry and Food Safety”, she received her doctoral training at the University of Messina and at the Institute of Food Research (Norwich, UK). In April 2013 she obtained the title of “Doctor Europaeus” defending the thesis "Discovery and analysis of a novel bacteriophage infecting Clostridium perfringens and subcloning and expression of its endolysin into Lactobacillus johnsonii: a potential control system against contamination in the food chain". Since 2014 she has been “Cultore della materia” for the teaching of “Fermentation chemistry” at the University of Messina. She has been awarded several scholarships at the same University. Dr Gervasi teaches the courses "Fermentation chemistry" in the degree course in Biotechnology of the University of Messina. She has collaborated with several international scientific institutions in the following areas: Fermentation Chemmistry, Microbial Biotechnologies, Food Chemistry and Microbiology. She has published more than 57 research articles in SCI(E) journals.

Biotransformation and Valorization of Agro-industrial By-products through Biotechnological Processes.
The research activity focuses on the analysis and development of innovative methods for extracting biomolecules from agro-industrial by-products, as well as their transformation through controlled fermentation processes. Specifically, the study aims to optimize microbial cultivation in continuous, batch, and fed-batch modes, using microplates, flasks, and bioreactors equipped with standard process control systems. The objective is to produce high value-added compounds, such as nutraceutical and food-grade biomolecules, single-cell proteins (SCP), bioethanol, and other bioproducts.
The Impact of Biomolecules and Biomaterials on Health, with a Focus on Gut Microbiota.
The research activity involves the analysis of the biological activity of food-derived biomolecules, as well as the investigation of their effects on gut microbiota and host metabolism. The study explores the biotransformation of these compounds by intestinal microorganisms and the resulting modulation of the microbiota through the produced metabolites. Another aspect of this research line, still framed within the exploration of the health-promoting potential of natural molecules and biomaterials, focuses on evaluating their antimicrobial properties against Enterobacteriaceae and a variety of other human pathogenic microorganisms. In this context, along with natural biomolecules and biomaterials, synthetic compounds are also examined with the aim of developing new antimicrobial strategies against antibiotic-resistant microorganisms.
