2002 – 2010 Teacher of Animal Production in the professional course concerning National Operating Programs (PON, 2000-2006), and Regional Operating Programs (POR – Sicily, 2000-2006).
2012 - Teacher of “Food safety and quality of the animal productions” in the Master at the Faculty of Economy of the University of Messina.
2001 – 2012 Teacher of Animal Production at the Specialization schools of the Department of Veterinary Science of the University of Messina.
He was the Headmaster of the "Production, hygiene and animal health" degree. He was a Component of the “Commission of the Centralized Veterinary Service for the protection of animals utilized with experimental aims”. He was a component of area Committee – Agrarian and Veterinary Sciences for the evaluation of University projects Financial years 2003/2004. He was a component of the Committee of evaluation for the assignment of research allowances relative to the area – Agrarian and Veterinary Sciences.
He is a Member of the Council of PhD in “Veterinary Science”.
Scientific coordinator in the project: The qualitative-quantitative characteristics of the black goat’s milk of the “Nebrodi” during lactation, in the field of POR Sicily 2000/2006, project no1999.it.1. po. 011/3.13/7.2.4/007.

He was Scientific coordinator in the projects “The qualitative-quantitative aspects of milk and the metabolic profile of “Red Sicilian Cattle” and in “The breeding of autochthonous Sicilian goats. The qualitative-quantitative aspects of the milk and social-economic examinations” financed by the University Research Programme (P.R.A.).
2005 Scientific coordinator "Influence of the different fattening typology on the traceability and the typification of the fresh and seasoned products of Nero Siciliano pig" financed by the Research Programme PRIN 2005 (40% MURST). He was Scientific responsible of the research activity for the pig and goat sector in the field of the project 6/F “Exploitation of the Sicilian patrimony, sheep, goat, pig and equine” promoted by the Agricultural and Forest Councillorship of the Sicilian Government.
Prof. Zumbo has been involved in many nationals projects (PON) on industrial research and technological innovation and he participates in: project ”BE&SAVE” – Smart cities and communities and social innovation, technological transfer and innovation industrial research for use agriculture waste to animal feed for food production; project “BIO4BIO” - Biomolecular and Energy valorization of residual biomass from Agroindustry and Fishing Industry, technological transfer and innovation industrial research for use agriculture byproducts as feed for food production.
He was a member of the Provincial Council of Reserves and Natural Heritage of the Province of Agrigento
Since 2009 – Nominated by the Rector of the University of Messina to represent the University at the Council of Meat research Consortium (CorfilCarni), a Research Centre of the Sicilian Government.
Member of Commission for selection examinations for doctoral student, researches, University technicians, technical-scientific area.
Since July 2015 he is Delegate of Rector of the University of Messina in the Technical Operating Committee (CTO) of the Degree course in "Animal Production Sciences and Technologies" (STPA) of the Magna Graecia University of Catanzaro.
He is a member of the following scientific associations :

Italian Society of Pathology and breeding of Sheep and Goat (S.I.P.A.O.C.),
Mediterranean Health Federation and Ruminant Production (FEMESPRUM).
Author of 160 scientific papers published on national and international journals and congress proceedings in the field of animal production. In particular, the research activity regards topics concerning the meat and milk quality, the metabolic profile of animals and the relationship between feed and animal production. Recent studies have considered the exploitation of the breeds and/or autochthonous Sicilian populations, with particular attention to the characteristics of the productions such as meat and milk.
